Guilt free treats

My diet is pretty limited these days; or so they say

And I admit that there was a period when I struggled with all that I ‘couldn’t’ eat

Well, I could eat anything I wanted, but if I wanted to feel good….

But as I focused more and more on all that I could eat the story changed. It did its last dramatic shift when I discovered guilt free treats, otherwise known as pain free/ fat free/ misery free treats

The turning point came with these delicious little bites of bliss….

I shall warn you right now that these are irresistible
“Oh sure” I hear you say
Well, don’t say I didn’t warn you
One friend says she now looks for an opportunity to be social so that she can make them and share them, saves her from eating them all herself, but don’t take my word for it, here’s the recipe, you can see for yourself AND we can deliver everything you’ll need with your next food box!

2 cups raw or activated almonds
3/4 cup coconut sugar ( like toffee granules)
2 tblsp raw cacao powder
150g coconut oil ( the extra virgin is by far the best for this)

Blend nuts, sugar & cacao till breadcrumb consistency
Add coconut oil heated to liquid form
Mix very well
Press into a lined container
Refrigerate till set/ hard
Slice and share
Sooo easy

Also delicious with a big bunch of fresh mint in the initial blending stage
Or glacé or pickled ginger chopped fine and mixed through in the final mix
Chilli… If that’s your thing
Cinnamon
You name it. There’s a whole world out there!

Note; you can swap to plain coconut oil when you don’t want the coconut taste and adjust the quantity a bit when adding more dry ingredients
The less finely chopped the nuts the more erratic the squares at the end (though it still tastes brilliant)
